Recipe
For the Salad
– 1 tablespoon olive oil
– 1 pound ground beef
– 1 teaspoon salt
– ½ teaspoon black pepper
– 6 cups romaine lettuce (chopped)
– 1 cup shredded cheddar cheese
– ½ cup tomatoes (chopped)
– ½ cup dill pickles (sliced)
– ½ cup onions (sliced)
For the Big Mac Dressing/ Thousands Islands Dressing is Perfect Also
– ½ cup mayonnaise
– 2 tablespoons dill pickle relish
– 1 tablespoon ketchup (unsweetened if you’re keto!)
– 2 teaspoons mustard
– 1 ½ tablespoons apple cider vinegar
– ½ teaspoon garlic powder
– ½ teaspoon onion powder
– ½ teaspoon smoked paprika
– ¼ teaspoon salt
Add olive oil to a large skillet over medium heat. Once the oil is hot, add in ground beef, salt and pepper. Cook and crumble until the meat’s no longer pink, about 7-10 minutes. While the beef cooks, add all the dressing ingredients to a small bowl and mix them all up. Adjust seasoning to taste.
To serve, build a salad of romaine lettuce, shredded cheddar cheese, chopped tomatoes, dill pickles, and onions. Top with ground beef and dressing! Boom – deconstructed, bunless Big Mac.
